Evening Destination: The Dorsey Cocktail Bar

  • Location: The Venetian

  • Why we're going: This is not a mere bar; it's a library of spirits. The Dorsey understands the craft. The lighting is low, the leather is worn, and the bartenders are artisans. It’s the perfect place to begin your education.

  • The Dram: They have an extensive bourbon list. Order a flight to compare the sweet notes of a wheated bourbon against the spicy kick of a high-rye.

  • The Sustenance: You are here for one reason: the Smoked & Fried Half Chicken. It’s brined for 27 hours and smoked with a whisky-barrel stave. The subtle smokiness is a revelation. Pair it with their Mac & Cheese and thank me later.

Pre-Dinner Drinks: Whiskey Down

  • Location: MGM Grand (a worthy pilgrimage)

  • Why we're going: Before the main event, we must pay our respects at a true temple of whiskey. With over 50 rare and unique selections, this is where you find the spirits you can't find anywhere else. It’s a place for quiet contemplation before the evening's revelry.

  • The Dram: Their cocktail list is superb. Order an Old Fashioned made with a high-quality rye whiskey. The bartenders here understand the importance of proper dilution and temperature.

  • The Nightlife: As the evening progresses, the energy builds. The live performances become more vibrant, and the supper club transitions into a sophisticated lounge. It’s the perfect place to linger, enjoy the show, and savor your final night.
