BenFiddich remains largely unchanged since Kayama opened its doors a decade ago. The seating has increased from eight to seventeen, but the menu is still absent.
Instead, Kayama engages in a conversation to discern your preferred flavor profiles – gin, whisky, spirit-forward, sour, or something else. He then meticulously carves ice and selects from his wall of tinctures and elixirs, which includes vials of wormwood and jars of fennel grown by his family.
You might be treated to custom Campari served in a vintage glass, infused with hand-ground spices, or perhaps some of Kayama's homemade absinthe.
Whatever you receive, it will undoubtedly be excellent.
